After months of being bombarded with so much H1N1, influenza, etc., information, the first thing I thought of when I saw the title of this post was, "Oh, no! Now what?" LOL
I hate when people use racist terms like "Jungle Fever". 'Cause I know, the "Jungle" part refers to the the black person in the interracial couple. What animals synonymously associated to people of African descent by racists live in the Jungle? Monkeys. The "fever" part refers to the white person of the interracial couple suggesting that the person must be "sick/ill" to be dating a black person. A similar term is "Yellow Fever" referring to an interracial couple in which one person is of Asian descent. Who came up with this term? I hope it wasn't Spike Lee?

She was probably new to interracial dating and was excited by the thought of it... I get the impression that her relationships were not serious, so she was trying to express how "cool" or "different" it was by using a term that most IR daters actually find offensive.
