I found this pic online on tumblr (is that ok to post? if not ill take it down. its from jayneofalltrades)
This is the result im looking for...Moisturized "looking" curls with curl definition..
Your hair type looks similar to mine but it is a fuzzy photo...
I think you should definitely add a moisturizing product to soaking wet hair before you airdry and also DC more often especially after shampooing as the shampoo may be quite harsh on your curls and dry them out.
What products/methods have you tried out so far?
This may help.http://www.youtube.com/watch?v=4j5PnUMmNh4
Also I second the adding of moisturizing products. Make sure you are consistent with it like moisturizing every day.

Seems like you might have low porosity hair then! You should still moisturise with regular products but your hair needs a little help accepting that moisture.
Try deep conditioning with moderate heat with a penetrating oil on wet or damp hair. E.g, using a hooded dryer with coconut oil after showering. Or you can use the alkali -> moisture -> acid method by cleansing with a dilute baking soda mix, deep conditioning then rinsing with an ACV mix that you kept in the fridge.
My mistake in my earlier post btw. An ACV rinse will CLOSE your cuticles and prevent moisture from leaving or entering. Leave that asyour final step, not your first!!
You wrote you flat iron it when you wear it down. How often do you flat iron it? Do you protect your hair properly when you do?
