From my understanding, the V and U shape are used to describe the way your hair looks when down and viewed from the back...and for some pple, that's how their hair grows normally. It's also how you may cut your hair: blunt cut(straight across), U-shape and V-shape. The pictures at the bottom of this page will give you an idea.

And for the "S"...it's usually used to describe the look of hair strands, check out LOIS. I believe André's typing also uses S shape to describe A's and Z shape for B's (at least that's somewhat how I recall the two kinds of type 4 hair being described).
