Flatiron with/without product

I'm thinking of flatironing after airdrying. I'm trying to figure out why it seems that there is quite a bit of product used when flatironing. Isn't that like frying your hair/cooking your hair or is it a way to maintain moisture while flatironing? Or is it to acheive shine or smoothness? My goal with flatironing is not bone straight but less poofiness. What about if I just do the leave in, flat iron and I'm talking a quick run through not a tedious section by section, then do moisturizer and oil to seal. I'm clueless...this is just me thinking out loud and trying not to use a lot of heat. TIA!

Oops I forgot to say I use a heat protectant also.
 
I think that's the best way to flat iron if you want movement. A "relaxing" leave-in and heat protectant. That's all I use now and my hair likes it.
 
while my hair is wet i spray in leave in and heat protectant and sometimes foam wrap then i blow dry and flat iron then moisturize and seal.
