Why does almost every thread I read end up in my "subscribed threads" section when I didn't even subscribe to it?

Try this:
Click on User CP.
Scroll down and click on Edit Options on the left side. It's under the heading Settings & Options.
Scroll down a little until you come to the heading Messaging & Notification in the middle of the screen.
In the subheading Default Thread Subscription Mode is where you can adjust your subscription settings.
