Are there a such thing as a serum that doesn't coat the hair ?
 
I could be wrong, but I don't think so considering that is the purpose of most if not all serums. The molecules are too large to penetrate the hair follicle.
 
Yes, I believe that all serums coat the hair because that is their purpose.

Are you asking if there are serums that don't leave a coated feeling on the hair? If so, the answer to that question is yes. I never feel a coating on my hair when I use Paul Mitchell's Super Skinny Serum.

For non coated feeling, I like fantasia ic olive oil serum and creme of nature argan oil gloss and shine mist.
 
For a non coated feel I like CON Argan oil polisher, gloss n shine mist, Argan oil treatment. I also love Macadamia natural healing oil, organix coconut nourishing anti breakage serum and my absolute favorite is the Organix Macadamia hydrating oil!!
