Straight. Always. I freshly wash and flat-iron my hair for interviews. I do this because it is the look that I am most comfortable with and that makes me feel more confident. I believe that it is very important to feel confident with your look from head to toe for any interview, whatever that look may be.
I had two days of interviews last week at a placement conference and wore my hair down and wavy (but not in my face). I agree with Solitude that you have to do the look you are most comfortable wearing. If you try to do something completely different it might make you feel "off" and instead of keeping your mind off your hairstyle it'll make you want to mess with it, etc.
For interviews I wear my trusty middle-of-the-back-of-my-head bun. It's neat, businesslike and I feel totally confident wearing it. I also make sure that my eyebrows are well groomed I feel like they are a great accessory with the bun look.
