Can anyone explain this or knows where I can find information on this? How does one know what level is the best for their hair?
 
Hair PH levels tend to correspond with body PH. Your body's PH affects all parts of your body, heart, liver, kidneys, blood, skin hair and nails. Scientists have found for the most part that your body must have a healthy alkaline to acidity level for your body to perform and feel well. I take coral calcium, plus cod liver oil which helps deliver the coral calcium to the cells. Coral calcium helps to create a healthy alkaline environment for your body by supplying more oxygen to the cells. If your alkaline level is good, bacteria and germs cannot survive. They even did a study where they studied cancer cells under a microscope and then introduced them to an alkaline enviroment. All the cancer cells died. They have found that cancer patients have low calcium level. The everyday calcium supplements sold in health food stores will not do the job. The calcium must be ionized and must be coral calcium. I get the kind that is harvested off in Japan. The people in the area off of the coral reef live an average of 95 years old. I have been using a powdered version for about six months now, along with a great powdered mineral supplement. I have more energy (even when I don't get much sleep, I may wake up sleepy, but not tired. If you know what I mean). I have clearer skin and the elasticity has improved (firmer), my hair is thriving and I can actually see my nails grow overnight almost. I can cut them off completely and by the next week, there is noticable growth.

I didn't put the other stuff since this pretty much answered your main question.

Hair in a healthy state should have a pH of between 4.5 - 5.5. Hair's natural oil, sebum, has a pH of 5. On the pH scale of between 1 - 14, 1 being the most acid and 14 being the most alkaline, relaxers have a pH of between 8.4 and 14, thus changing your hair's naturally slightly acid state to alkaline. This will cause the hair to feel dry, coarse, and in extreme cases you may experience hair breakage. It is therefore imperative to take good care of your newly-relaxed hair by the use of pH balanced treatment shampoos and conditioners.

I don't know how to keep the hair at a particular pH level, but Edie's information is correct. I've learned that keeping the body alkaline (most people's bodies in the U.S. are acidic, thus health problems) results in the proper pH in the hair.

Water is 7.0 which is neutral and adding some lemon to each glass makes it more alkaline. And we all know how drinking lots of water benefits our hair and bodies. Sylver2 mentioned in a post or two that drinking water with lemon has contributed to her long, lush hair. I think she said her hair grew faster. :scratchch

Vevster had a thread about this pH topic in relation to overall health. It's very important to have a good pH balance in our bodies and our hair can only benefit.
