I think you should be okay with one bottle - just to make sure you get all of it, let it sit upside down for about 30 minutes. I would also leave it on a little longer than the bottle indicates (as long as it is the no mix semi permanent color) I leave mine on for ridiculously long times and have not had a problem...What brand did you purchase?
 
I have used only one bottle I am somwhere in between also and I have a lot of hair. I bought 4 bottles thinking I would use at least 2 of them but so far one seems to cover the gray. I also leave mine in for at least 30 to 45 minutes and have had no problems with it.

Be sure to work it in really well and when you rinse it out keep your gloves on or use new ones.

I'm going to try Adore Extra Conditioning Semi-Permanent Rinse (Velvet Black).Do you use heat with yours?

Thanks for the tip.When I used colorshowers I rinsed it out with bare hands and my hands got stained.

All the time - I use either a heating cap or get under the dryer - then I let it cool off before rinsing - that could be up to hour or so later depending on my mood
