Does anyone know why the steam seems to be escaping through the back of the unit, with no steam in the hood?

You have to make sure the cup is lightly secure if not it will come through the back.... Try taking the cup out and placing a sample amount of water and see if you've placed it tight enough .

Yes, if the hood isn't securely attached it will come out through the back. I had that happen once to me. I make sure I really press/push the attached parts together now to make sure it's completely sealed on there!
