When i have a Deep condtioner in (I like the olive Oil one) over night myhair curls up into these really defiend curly spirils but soon as a raise it out it looks dry and dull :(?

Not odd. It's pretty common, actually. Natural hair (especially kinky natural hair) has sheen, not shine.

To provide more texture definition and shine, I:
-add honey to my conditioner & gel
-use a good quality leave-in to prevent hair from drying out
-squeeze excess water out of hair instead of using towels
-shake my hair vigorously for coil/curl separation and definition
-use a shine spray if I feel like it
-don't touch it after the shake to prevent excessive frizz

Mabye your hair has product build-up. Try using a clarifying shampoo (I like the Organic Root Stimulator Olive Oil shampoo for this). Then deep condition again (I also like Organic Root Stimulator Olive Oil conditioning pak) and see if your hair looks better. Hopefully that will help.

I feel ya! This is why I don't wear wash/shake and go's. When my hair is wet it's coily and has movement, but as it dries it begins to look more and more like a brillo pad. The crazy thing is that it will still feel moisturized but will have an ashy look. (BTW-I clarify every time I wash so it's not build up)
