How do you store coconut milk?

I'm not sure if you're supposed to put it in the fridge after opening it...

Yes, once opened, coconut milk has to be refrigerated. Also, you'll notice that a thick coating of the milk will separate from the watery portion of it once it sits for a few days. This is good. Just scoop that thick part off the top and you're good to go. Although, you can still use the water part, this part is the richest

Someone else said they store in the freezer, which I'm sure would extend the length of time it could be kept. I put mine in a plastic countainer and just throw it in the fridge. It don't think it goes bad quickly and the Thai version hasn't even seperated on me. I haven't used it w/every wash, so it's stayed around for 2-3 weeks w/o a problem.
