Okay I just can't figure out what it is...What does it do for your hair? How do you do it properly? What do I need to watch out for? A response would be sooo much appreciated, TIA!

As long as I think I'm answering what you are asking....
1.) Roller setting is a method of styling the hair w/ rollers. I use hard plastic rollers, either w/ a medium diameter for a curly look or w/ a large diameter for a bouncy straight full look.
2.) What it does for my hair is gives it a full shiny straight look w/o too much damage or heat.
3.) Doing it properly would be its own separate post, actually a few members have posted quite a bit on how to do it properly. I think the key is to set well-conditioned hair that is combed out smoothly with products that provide a soft hold.
3.) what to watch out for....hmm, too hot dryers, crappy rollers or pins, poor technique...it tends be fairly safe w/ the proper tools and technique.

*edited to add* here is a link to Amilion's instructions: Rollers

Thanks for the info. I was wondering what I need to make a doobie, I think thats what I want, its for straight style's right?

What texture does your hair come out like?

yeah, the doobie is for the straight look. the roller setting can make the hair curly. so you do a doobie afterwards to get that smooth look. someone had step-by-step in their picture trail pics. i can't remember who though...

Does anyone know if a natural head can do a doobie for a straighter look? Andd if so, how do you do one? I don't think I have the time and patience to roller set my hair.

oh yeah, it's kking who has the great demonstration of the doobie wrap. check her album and her gorgeous hair out:

kking doobie wrap

i hope you don't mind me pointing her in your direction, kking!

yes, natural heads can do rollersets/doobies as well. I'm a natural and I just started to get the hang of the technique and I like being able to from curly to straight with out using much heat. Sweet cocoa is known as the rollersetting queen I also must add.
